Cowboy Breakfast Casserole

This casserole is super easy and perfect for a holiday breakfast because you can prep it the night before, cover and store in the fridge, then just throw it in the oven in the morning! Takes 45 minutes to an hour to bake.  That's just about the amount of time it takes for everyone to open and admire their CHristmas presents!  Haha!  Once everyone is done, breakfast is served! 






For a square baking dish -
1 bag refrigerated shredded hash browns (you can usually find them in the grocery store near the eggs)
1/4-1/2 cup shredded cheddar cheese (I just sprinkle until it covers the top)
Cooked breakfast meat (I usually use 5 or 6 pieces of cooked, crumbled bacon, but you can use diced ham, turkey bacon, diced Canadian bacon, or cooked and crumbled sausage)
Chopped onion (optional)
2-3 eggs
3/4 cup milk
Salt and pepper (I don’t do much salt since bacon is already salty)

1.) Preheat oven to 350 degrees and spray your baking dish with cooking spray.
2.) Spread hash browns in the bottom. 
3.) Sprinkle with cheese, then onion, then breakfast meat
4.) in a small bowl, whisk eggs, milk, salt and pepper together. Pour all over casserole. Bake at 350 for 45 minutes to 1 hour (until eggs are cooked and knife comes out clean. 
Note 1: You can easily double the recipe.  Double all the ingredients and use a 9x13 pan.  Baking time remains the same. 
Note 2: I use Simply Potatoes shredded potatoes. They also make a Southwestern version with some onions, bell peppers and spices for a little kick! If you use those, you can just leave the onions out of the recipe.
Note 3: You can mix things up with the cheese. Use all sharp cheddar, or use Colby jack. Or even pepper jack if you like some kick!
Note 4: Pplay around with the recipe and make it your own! Throw in diced bell pepper, jalapeƱo, mushrooms, your favorite spices, etc!
