Chicken Broccoli Cheddar Bites

As a mom of three littles, I'm often looking for easy, quick recipes.  Even if you aren't a mom, sometimes things come up and you don't have the time or ability to make a big meal.  Take last night, for example.  Around 3pm I began getting a horrible migraine.  Thankfully, I'd already prepped dinner.  But that's often not the case.  Sometimes a migraine or some other problem comes up and there's nothing easy in the house.  That leads to us eating takeout - which is just a waste of money that I don't like.  So I like to keep easy things on hand.  Stuff I can pull out of the freezer and pop in the microwave or the oven when the need arises.  These bites are perfect for that!  And this recipe makes 30 bites, so you can stay well stocked!



Chicken Broccoli Cheddar Bites

Ingredients:
2 heads of broccoli, chopped into small pieces
1 red bell pepper
1/4 to 1/2 red onion, chopped
3 chicken breasts, baked and chopped
1 1/2 cups shredded sharp cheddar cheese
1 teaspoon salt
2 teaspoons dill weed
3/4 cup mayonnaise
1/3 cup ranch dressing
1/4 cup slivered almonds
1 cup baking mix, such as Bisquick
1 cup milk
4 eggs

Directions:
1.) Preheat oven to 375 degrees F.
2.) Mix broccoli, bell pepper, red onion, chicken, cheddar cheese, salt, and dill weed together in a large bowl.


3.) In a small bowl, mix together mayonnaise and Ranch dressing.
4.) Combine mayonnaise mix with broccoli mix and mix well.
5.) In a medium bowl, mix together baking mix, milk, and eggs. (It will be very thin.)
6.) Grease a muffin tin with canola spray.  Put a scant 1 tablespoon of the baking mixture into the bottom of each muffin cup. 


Place 1/4 cup of broccoli mixture on top. 
Then pour another 1 tablespoon of baking mixture on top of broccoli mixture.
 
7.) Sprinkle each "muffin" with slivered almonds.


8.) Bake in a preheated 375 degree oven for 25-30 minutes, or until a toothpick inserted in the middle comes out clean. Let cool in pan for 5 minutes.  Then, using a knife, run around the edge of each muffin to help remove them.
