"Lighten Up, Y'All" Cookbook Review

I'm a Southern girl through and through.  I love all things Southern, especially when it comes to food - BBQ, potato salad, deviled eggs, mac & cheese, fried okra, casseroles, Duke's Mayonnaise, pies, cakes, Dr. Pepper, pecan brittle, and even a cold bottle of coca cola with some salted peanuts dropped inside.  (If that last one grosses you out, don't knock it until you've tried it!) But there's one thing that's true of Southern food - its quite often unhealthy.  That's why I was excited to review "Lighten Up, Y'All!"



As I said, Southern food can often be unhealthy.  But let's face it, its GOOD!  Sometimes, however, you need to make healthy choices - especially if you eat these foods often.  LOL!  So I often look for healthier alternatives.  DOn't get me wrong.  On Thanksgiving, Christmas, Easter, birthdays, MLB opening day, and the beginning of College Football season, its unhealthy all the way!  Haha!  But on the average day I try to make healthier choices.  "Lighten Up Y'All" is a good resource.  Virginia Willis is Southern, so she knows the food!  But she also makes great substitutions - baking foods instead of frying, low far cheese, 2% milk, etc.  You can still enjoy you Southern foods without packing on the pounds!
